On January 25, 2025, Malliotakis expressed her honor in administering the oath of office to Brooklyn’s newest State Senator Steve Chan at New Utrecht High School. She noted his prior service in the Marines and NYPD and his readiness to serve the community in Albany. "Nicole was honored to administer the oath of office as Brooklyn’s newest State Senator @SteveChanForNY was sworn in today at New Utrecht High School! After serving in the Marines & NYPD, Steve is ready to serve our community in Albany."

On January 27, 2025, she announced her position on The Congressional Hispanic Leadership Institute's Board of Directors. As a proud daughter of a Cuban refugee, she emphasized her commitment to advocating for policies that support opportunities for all within the Hispanic community. "As the proud daughter of a Cuban refugee, it’s an honor to serve on @TheCHLI’s Board of Directors. I’m looking forward to amplifying the voices of the Hispanic community & advocating for policies that protect & promote greater opportunities for all."

Later that day, Malliotakis commemorated Holocaust Remembrance Day by marking 80 years since Auschwitz-Birkenau's liberation and remembering six million Jewish lives lost during World War II. She called for vigilance against rising antisemitism and urged collective efforts toward its eradication.
